Anchovies are known as Netholi or Kozhuva in Malayalam. It is a favorite among most Keralites. Fried Anchovy happens to be my favorite among all fried fishes. It is very tasty and is an excellent side dish for Rice. Thankfully, we get fully cleaned Anchovies here at most supermarkets and so I save a lot of time.
Ingredients
- Anchovies (Kozhuva/Netholi) – 1/4 lb
- Lemon Juice – 1 tbsp
- Oil – 3 or 4 tbsp
For Marinade
- Red Chilly Powder – 1 to 2 tsp (alter according to your spice level)
- Pepper Powder – 1/4 tsp
- Turmeric Powder – 1/4 tsp
- Fenugreek Powder (Uluva) – 1/4 tsp
- Lemon Juice – 1 tbsp
- Salt – to taste
Preparation Method
- Clean the anchovies and soak it in water along with 1 tbsp lemon juice for around 5 minutes.
- Wash and drain the anchovies.
- Prepare a marinade using the above ingredients and apply it on the anchovies.
- Refrigerate it for half an hour.
- Heat oil in a non stick pan for shallow frying.
- Place the anchovies in the pan and fry both sides on medium heat till it turns brown.
- Serve the fried anchovies with rice.
