I wanted to make a mild chicken gravy different from the usual Spicy Kerala Chicken Masala. I tend to use Coconut Milk for most of my gravies, but this time, I had some unused Heavy Whipping Cream in my fridge and so I decided to give it a try.
The gravy was thick and delicious. We savoured it with both Rice and Roti. Here is my recipe for a Chicken Curry in Whipping Cream.
You can see the recipe for Kerala Chicken Curry here.
Ingredients
- Boneless Chicken -1 pound
- Chopped Onions – 2 medium sized
- Chopped Tomatoes – 1 big
- Slit Green Chillies – 2
- Curry Leaves – A sprig
- Ginger Garlic Paste – 2 tsp
- Chicken Masala Powder – 1 tbsp (I use store bought Eastern or Nirapara brands)
- Homemade Garam Masala Powder – 1/2 tsp
- Chilly Powder – 1/2 tsp (Alter according to your Spice Tolerance)
- Coriander Powder -1 tsp
- Oil- 2 tbsp
- Salt – As required
- Water – 1/2 cup
- Heavy Whipping Cream – 1 Cup
For marinating
- Chicken Masala Powder – 1 tbsp (I use store bought Eastern or Nirapara brands)
- Turmeric Powder – 1/4 tsp
- Chilly Powder – 1 tsp (Alter according to your Spice Tolerance)
- Ginger Garlic Paste -1 tsp
- Pepper Powder – 1/4 tsp
- Salt – to taste
- Sour Cream – 2 tbsp (You can instead use lemon juice/yogurt)
Method of preparation
- Clean and cut the chicken into medium sized pieces and marinate it with the above ingredients. Keep it in the fridge for an hour.
- Heat a pan or kadai and add 2 tbsp oil. Saute the sliced onions, green chillies and curry leaves till the onions become translucent.
- Add the chopped tomato pieces along with little salt and stir well till the tomatoes are mashed.
- When the tomatoes are cooked well, add 2 tsp ginger garlic paste, 1/2 tsp freshly ground garam masala powder, 1 tbsp chicken masala powder, 1/2 tsp chilly powder and 1 tsp coriander powder. Stir fry for 2 minutes.
- Add the marinated chicken pieces and mix everything well.
- Add 1/2 cup of water and cook covered on medium heat for around 20 minutes, stirring the chicken occasionally. Add more water if required.
- Reduce heat and add whipping cream. Simmer for another 3-5 minutes so that the gravy is thick.
- Serve with Cooked Rice or Rotis.
Note
- You can use any store bought chicken Masala Powder or you can prepare it at home. Brands like Eastern, Saras, Melam, Priyom, Niraprara etc. are good. Click here for Home Made Chicken Masala Powder ingredients.
