Maida Ada or Pancakes made using Plain Flour used to be one of my childhood tea time snacks. There was another sweet pancake made using Rice Flour and Grated Coconut. We called it Thenga Ada meaning Coconut Pancakes. These coconut pancakes are easy to make and you can have it with any Chutney, Stew or any spicy Curry. Whenever I have in a hurry and don’t get time to make Palappam or Dosha, I make these simple pancakes for breakfast. Here is the recipe for Coconut Ada.

Coconut Ada - Coconut Pancakes
Ingredients
- Rice Flour – 2 cups
- Grated Coconut – 1 cup
- Sugar – 2 tbsp
- Salt – to taste
- Cumin/Jeerakam – 1/4 tsp
- Water – As needed
Preparation Method
- Grind all the ingredients along with water to make a smooth batter with consistency similar to that of appam. Keep the batter aside for 10 minutes.
- Heat a non stick tava or griddle. Pour the batter on to the tava to form a medium sized pancake.
- Cover and cook on medium heat till one side is cooked. This will take around 3-4 minutes. Uncover, turn sides and cook for 2 more minutes.
- Serve hot with any chicken curry, vegetable stew or even chutney.
